  • Peel and dice potatoes. Put potatoes into pot. Fill pot up until it has covered all of the potatoes (no more, no less). Add olive oil, salt, pepper, and parsley. Once it boils, let it sit for 5-10 minutes Drain potatoes and put into mixer with the whisk attachment. Add butter and whip at highest speed. (But be sure that it doesn't go flying everywhere!) Add milk. Mix. Add salt and pepper. Mix. Add parsley. Mix. Serve with gravy! YUM!

  1. I worked for Boston Market and every recipe I see for their mashed potatoes is WAY off. Now it's a long time but I believe a batch of potaoes was 40 lbs - (might be 80 lbs) and for every batch we steamed peeled potaoes, steamed half an onion, used 6 POUNDS of butter and SEVEN half gallons of milk (3.5 Gal.) plus a 16oz seasoning pack that tasted suspiciously like "Jane's Crazy Salt" There is A LOT of butter fat in Boston Market mashed potatoes and no recipie I have ever seen comes close to the amount of butter and milk we put into it.
