ingredients
- 1⁄2 lb potato, cooked in their skins
- 1⁄2 lb grated raw potatoes
- 1 1⁄2 cups buttermilk
- 1 3⁄4 cups flour
- 1 teaspoon baking soda
- salt & pepper
- 2 tablespoons butter (for frying)
directions
- Remove skins from cooked potatoes. Mash with buttermilk. Add grated raw potatoes, flour, soda, pepper, & salt.
- Scoop onto hot, buttered griddle to make 3 inch cakes. Fry until golden and crispy.
- Serve with butter or honey.
