- 2 lbs beef sirloin tip, cut into 1-inch cubes
- 1 (10 1/2 ounce) can beef consomme
- 1⁄3 cup red Burgundy wine or 1/3 cup cranberry juice cocktail
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1⁄4 teaspoon onion powder
- 2 tablespoons cornstarch
- 1⁄4 cup water
directions
- Be sure all visible fat is trimmed off the meat.
- Brown on all sides in a large heavy skillet.
- Add consomme, wine (or cranberry cocktail), soy sauce, garlic and onion powder.
- Heat to boiling.
- Reduce heat, cover, and simmer 1 hour, or until meat is tender.
- Blend cornstarch and water and stir gradually into the stew.
- Cook, stirring constantly, until gravy thickens and boils.
- Cook 1 minute more.
- Serve over rice.

This was outstanding! My husband loves comfort food and this is just that. We used wide egg noodles rather than the rice, since that's the way his mother served it when he was a kid. The gravy was perfect. I added some dried rosemary for a little extra flavor. I couldn't quite picture the addition of cranberry juice to the gravy, but I used it anyway since I didin't have any wine. It added just enough sweetness to balance all of the savory. This recipe will be a favorite in our house from now on.

I LOVE to cook and eat and read cookbooks. My kitchen really does overfloweth with them and of course this has quickly become my favorite cooking site! I live with my husband in a small town in eastern Connecticut. We are both retired. My children are all grown and have families of their own now. Our 3 grandchildren and 1 great-granddaughter all live in Florida and it goes without saying that we miss them very much, so when my husband retired last year we celebrated by buying a small RV! We so enjoyed driving it to Florida to spend the holidays with the little ones. Although COVID has prevented us from repeating the trip this year, I am enjoying learning new recipes to make in our RV for next year. I think the Instant Pot and the Crock Pot will be my new best friends while traveling!
