  • Cook yams in boiling water to cover 45 minutes or until tender; cool to touch.
  • Peel and mash.
  • Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11x7 inch baking dish.
  • Brush top with 1 tablespoon melted butter; sprinkle with orange rind.
  • Bake at 350 degrees for 25-30 minutes.

  1. AWESOME and OUTSTANDING!! I used sweet potatoes--couldn't get yams. Had a delicate brandy and butter flavor with the yummy spices that enhanced the flavor of the potatoes. Very soft and creamy texture. I served this with pork shoulder and brussel sprouts. Worth more than 5-stars. Thanks!!
     
  2. This was my contribution to the family Christmas dinner this year (besides sweet stuff, that is), and I wish I had not made it without first doing a trial run. For my tastes, the recipe does need tweaking. This was very simple to prepare and the directions are straightforward and easy to follow. I was also pleased that the recipe contained no cream; it is definitely smooth and creamy enough without it. But some of the family found the brandy taste too overpowering and I noticed that one family member couldn't even finish what was on his plate. To be fair, my MIL and one BIL thought this was fantastic. Unfortunately, I also found the brandy flavour a little too much and I also thought the nutmeg taste was a little strong as well. When we divvied up the leftovers, it was telling that nobody wanted to take any home with them. I will definitely make this recipe again, but with some alterations to it.
     
  3. Excellent! I used cognac and fresh grated orange rind. My daughter usually won't eat sweet potatoes, but loved this dish.
     
  4. I am from a non-sweet potato eating family so never ate them growing up. I have recently discovered how much I like them. This recipe was superb. The potatoes were smooth and creamy with a wonderful subtle brandied and spice flavor. I made them to go with pork chops. Thank-you Nurse Di, for sharing this recipe.
     
  5. I made this dish for Thanksgiving. I used the real deal yams too. Tasted divine and oh so rich and sweet. A wonderful addition that went with the turkey and dressing. Thanks for this one.
