  • Preheat oven to 400 degrees F.
  • Mix sugars, shortening, egg, milk and vanilla.
  • In a separate bowl, mix flour, coffee, salt, baking soda and baking powder.
  • Stir flour mixture into sugar mixture.
  • Shape dough into 1 inch balls.
  • Place about 2 inches apart on ungreased cookie sheet and flatten with a fork dipped in sugar.
  • Bake until light brown about 7 to 8 minutes.

  1. These cookies are so simple to make and as long as you have instant coffee on hand, the ingredients are staple pantry items. I was able to whip up a batch of these, have them out of the oven, and everything cleaned up in no more than half an hour. I had no trouble forming the dough into balls (my dough wasn't sticky) and flattening them with the bottom of a sugar-coated glass was super easy. I just had to re-apply a little shortening to the glass two or three times. Best of all, the cookies are delicious! Super delicious!
     
  2. What a tasty cookie! A new favorite for me. This recipe is wonderful as written, but can also be changed to add a few chocolate chips, or some cocoa powder for a mocha taste, or add some orange zest or almond extract So many possibilities to change this up a bit. I found it impossible to roll into balls , so instead I just shaped them with my fingers in a somewhat-ball -shape. I liked the flecks of coffee granules in the finished product, (kind of made me think of coffee beans). I also added an extra bit of coffee and 2 whole teaspoons of vanilla extract. Lovely cookie! I will make sure to double the recipe next time because these were gone too fast! Thanks a bunch!
     
  3. I added another TB of instant coffee, flattened with a glass ... then drizzled with a glaze of powdered sugar & Tia Maria ... SUPER EASY and FAST to make! A "keeper"
     
  4. So, out of the whole recipe, I got to eat two. Gone in a matter of hours. These have the absolute best texture, nice and chewy and slightly crisp on the outside, and the flavour is absolutely delicious too. Possibly my new favourite cookie. I've made them twice, the first time the instant coffee granules didn't quite mix in and flavour the dough, and stayed whole, kind of like a chocolate chip. That was actually very good. The second time I pre-mixed the egg and worked the coffee into the egg before adding it to the creamed mixture. Both times were great. Thanks for sharing!
     
  5. These are de-luscious! I made them exactly as written, except that I used instant espresso powder, sprinkled each cookie with a tiny bit of granulated sugar and flattened with a fork. Next time, I will double the recipe, because these were gone pronto! Thank you, thank you for posting!

Strangely enough, I've become a better cook to lose weight. I joined eDiets and lost 100 pounds. They are full of delicious, lowfat recipes with tons of trivia and humor. I teach science in a converted home ec kitchen. I love to use food as a teaching tool - making cheese to teach enzyme action, pickles to teach osmosis and diffusion, fudge to demonstrate igneous rock formation. I love kitchen gadgets, KitchenAid, Le Creuset cookware and my cats.
