Bread Machine Breadsticks

"The machine does the hard work and the shaping and baking in the oven is easy with this dough. Add your own toppings like dried onion bits if you like, but I like to top with kosher salt to bake and serve them with a roasted garlic butter.   • Add ingredients into your bread machine in the order given, excluding the egg white and water (glaze ingredients).
  • Start machine on dough cycle.
  • When the dough is ready turn out onto your countertop. You shouldn't need much flour.
  • Cut dough into pieces the size of an egg and roll and stretch with your hands into 6 to 8 inch ropes. Place on an ungreased baking sheet.
  • Cover with a tea towel and let rise 20 minutes.
  • Mix the egg white and Tbsp water to make a glaze and brush over the breadsticks after they are risen. Add kosher salt, sesame seeds, or other toppings if you like.
  • Bake at 400 degrees for 12 to 15 minutes until golden brown.
  • Time includes the 2 hour dough cycle.

  1. I made these tonight to go with baked ziti and they were a big hit with my family. I did make a couple minor changes though. In addition to the butter I added slightly less than 1 tbsp of olive oil and then I also let them rise for about 40 minutes, at 20 min they hadn't risen very much for me (probably because my kitchen was a little drafty tonight). When they came out of the oven I lightly brushed them with melted garlic butter and some Parmesan cheese. I will definitely be making these again. Thank you for sharing this recipe.
     
  2. WOW! These are the soft breadsticks we have been looking for. I let them rise about 40 minutes. We topped them with lots of garlic butter and parmesan cheese after baking. Make sure you bake them close together to keep them soft. Thank you PAC '08 for letting me meet Cookin-jo!
     
  3. I was intending to make pretzels but used this recipe by mistake. Wow, everyone LOVED them! The texture was phenomenal.

  4. made these breadsticks and the texture was so nice I made a loaf of bread. OMG it was light and fluffy. Used the rapid setting and boy I may never purchase another loaf of store bought bread again. Thanks
     
  5. I made these for a dinner with a class. The only thing I added was a sprinkle of Italian bread seasoning on top of the egg white. When they were cooked, I put a little butter on each on to keep them soft en route to the dinner. Everyone loved them, and I will make them again.

Tweaks

  1. 1. Because I thought I was making pretzels (!), I dipped them in a baking soda bath before baking. 2. I washed them with vegan margarine instead of egg, then sprinkled Kosher salt on top.

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown. I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy. I have 2 teenage sons and cooking to suit everyone's taste is always a challenge.
