- 1 cup honey
- 1⁄3 cup butter
- 1 cup of unsalted raw mixed nuts, chopped
- 1⁄2 - 1 cup of shaved unsweetened coconut (use to your taste but completely optional if you don't like coconut)
- 1⁄2 cup pitted dates, chopped
- 1⁄2 cup prune, chopped
- 1⁄2 cup dried apricot, chopped
- 1 teaspoon vanilla extract
directions
- Preheat oven to 360°F.
- Grease or butter an 8x8 square tin pan.
- Heat honey and butter in a saucepan and stir until butter has melted and is well combined with honey. Turn off the heat and add mixture to all other ingredients.
- Mix all ingredient well and pour into the prepared pan.
- Bake for 30 minutes.
- Cool in refrigerator until set. ( about 30-45 min,).
- Cut into bars and wrap each bar individually with wax/baking paper as they are sticky! Then store in an airtight container in the refridgerator.
- ***Note that you will want to eat these straight from the fridge as warmer temperatures with soften the bar up too much.
- prep time doesn't include cooling and cutting the bars afterwards.
