Breakfast Burritos

"These are great to have in the freezer when you don't have time to make a real breakfast in the morning. Try substituting other breakfast meats (ham, bacon, turkey sausage) to suit your personal preference."

  • Scramble eggs, cooking to a dry consistancy. Cool and put in a mixing bowl.
  • Brown sausage, drain fat and cool. Add to the eggs.
  • Saute vegetables until they have released their liquid and it has evaporated. Cool, add to egg mixture.
  • Add the salsa and cheese, mix to combine.
  • Heat tortillas briefly to soften. Scoop 1/3-1/2 cup of filling into each tortilla and roll up.
  • Place each burrito in a zip-top sandwich bag and seal, squeezing out all air. Place burritos in a freezer safe container and freeze.
  • To reheat, remove frozen burrito from the sandwich bag, place on a microwave safe plate, and cook on full power until heated through, 1 - 1 1/2 minutes.

  1. Great tasty breakfast burritos! Mine were actually tacos as I used the smaller sized whole wheat tortillas. I don't care for onion so left it out. These made a great quick "breakfast-for-dinner" meal - thanks for sharing the recipe!
     
  2. A lovely breakfast treat! I sauteed off the peppers ( I used red and green) and threw in a few jalapenos from a jar too,as we like a bit of heat.I then added the egg to the mixture to scramble,then threw in the cooked sausage and some chopped cooked bacon-making it a real one pan wonder. Rolled it all up with the cheese and salsa,and bingo...one yummy breakfast!! We really enjoyed these,and can see these becoming a weekend habit..woo hoo!!!
     
  3. *Drool* Love these! I added dill to the eggs and garlic to the sausage. I also threw in about 1 cup of cooked ham. Rolled them in whole wheat garlic pesto tortillas. Had to sneak one now, but can't wait til breakfast tomorrow!
     
  4. I made these for a quick breakfast this week. I did reduce the recipe to only make a few. I loved the addition of the mushrooms to this breakfast staple.
     
  5. I also picked this as one of my PAC Fall 2007. Yummy, my grandson had fun making these "Sonic" breakfast burritos. He is a fast food junkie at the age of 4. Very nice to have on hand when he needs to come over quickly and I have not gone to the store for him. Will be apart of my OAMC from now on.

I live near Seattle, WA with my husband of 11 years and our pet ferrets. We're lucky enough to own a home with a big, south facing yard which is great for entertaining. It also allows me to have a big vegetable garden where I grow most of my own herbs and a lot of the vegetables we eat in the summer, as well as a bunch to share with family and friends. In my professional life, I'm an accountant- but what I really love to do is cook and eat! Most of my ability is self-taught. I love to experiment with new recipes and techniques, most of which I get from watching way too much food tv and reading foodie magazines. Recently I decided to start a personal chef business and have cooked for a few clients. I love the challenge of designing a menu to fit a family's specific tastes and needs, and then cooking it for them to enjoy. For me, cooking is an expression of love. Everyone needs to eat, but food is more than just fuel for the body, it can nurture and comfort ~ give us a memory from childhood, or a retreat when we feel ill. I always think of the people who I'm cooking for when I make a dish, and there is no better compliment than when someone enjoys the food I've made especially for them. I also like to do OAMC- style cooking, but instead of using it mainly to get dinner on the table, I focus on getting lunch in the bag! Eating out is far too expensive in both dollars and nutrition to make a habit of, yet I want a hot, satisfying meal to enjoy in the middle of the day.
