"These burritos are not just for breakfast, they are a great anytime snack, if you desire, these could be fully prepared, and stored in the fridge....just make sure to bake them 10-15 minutes longer, or they may be frozen, just thaw them before baking."

  • Set oven to 350 degrees.
  • In a large skillet, fry hash browns according to package directions; remove and set aside.
  • In a large bowl beat eggs with milk; add chopped onion and green pepper, then season with salt and pepper.
  • Pour the mixture into the same skillet; cook over medium heat, stirring occasionally, until eggs are set; remove from heat.
  • Add the cooked hash browns and sausage; mix gently.
  • Place about 3/4 cup filling on each tortilla; top with 1/4 cup cheese.
  • Roll up, and place on a greased baking sheet.
  • Bake, uncovered for 15-20 minutes, or until heated through.
  • Serve with salsa if desired.

  2. I made these for breakfast on our camping trip over Memorial Day weekend. I doubled the recipe and browned the sausage, froze it, and chopped the peppers before leaving. I cooked the hash browns and reheated the sausage with the peppers. I scrambled the eggs with the sausage and peppers and then added the hash browns. Everyone filled their own tortillas with the egg mixture and cheese. (We didn't have a oven) These were very hearty and filling. Everyone loved them and came back for seconds and thirds! Next time I make them at home I will try baking them in the oven. Thanks for posting.
     
  3. These are wonderful to have in the freezer for quick meals. I don't bake them - just put them in the microwave for 2 minutes when ready to eat.
     
  4. Great burritos. I made them as directed except that I used red, green and orange peppers that I had on hand. I froze the rest of them for a quick meal for another day. Thanks Kitten for another great recipe.
     
  5. These are SO yummy! My family just scarfed them up. We'll be making them again soon--and not just for breakfast, either!
