  • Spray a 9" x 12" baking pan with non-stick cooking spray.
  • Melt butter and drizzle in the bottom of the pan.
  • Layer the frozen hash browns evenly to cover the bottom.
  • Layer cheese, meat and any desired vegetable on top of potatoes.
  • Whisk eggs, milk, salt and pepper.
  • Pour egg mixture over the top to cover.
  • Cover and refrigerate overnight.
  • Bake uncovered at 350º for 1 hour or until set.

  1. I made this using thinly sliced potatoes in place of the hash browns, as I don't like the texture of them, and the casserole was simple to throw together and so delicious! I opted for the sausage and it sure hit the spot!
     
  2. Made this for dinner for 12 people and everyone yummed it up. Followed the recipe exactly and used ham, red bell pepper, some onion and hash browns. Since I made 2 huge pans, I thankfully had some leftovers which kept in the fridge for 2 weeks and tasted as good as the first day I baked it. This is definitely a keeper -- thanks for posting it!

I had a group of friends stay over and wanted something nice (and easy) for breakfast..I prepared the night before as stated, mixed the milk with the egg (it doesnt say when to use milk but used my brains!) everyone loved it and I gave the recipe to a couple of friends. Served with peppered oven bacon. Thanks!
     
  4. This is a great recipe! I made mine with a pound of bacon. The only thing I would do differently next time is to mix the cheese, hash browns, bacon and onion together instead of layering them. Cannot wait to make this again! Thanks for sharing.
     
  5. My family loves it! I put salt and pepper on the hashbrowns as also into the egg mixture. Otherwise its a little plain for our taste. Used ham, sausage, bacon and onion. Very easy and a hit even for dinner. I love the "doing at evening and just stuff in the oven in the morning" factor. Very convenient :-)

Tweaks

  1. I substituted sausage for ham and left everything else as written. We took this for breakfast for our Sunday School class. It was a huge hit! Thanks
     
  2. This recipe is wonderful. It has become our favorite for large family get togethers or brunches. We have substituted a single layer of Tater Tots for the hash browns however. This makes it easier to cut into identical squares for serving giving a cake like appearance. Wonderful.
     
  3. I made this for the Breakfast Club where I work, and it was a hit! If they only knew how easy it was. I made it exactly as instructed. I think this would also work well with either bacon or sausage instead of ham, but the ham was really good. Thanks, Diane!
