  1. Preheat oven to 425.
  2. Lightly scramble the eggs in a mixing bowl with a whisk. Stir in the milk, garlic salt, and black pepper. Continue to stir with the whisk until the eggs are light and frothy.
  3. Spread the pizza crust out on a sheet pan making sure to press the dough up the sides of the pan.
  4. Brush the crust with olive oil and bake for 7 minutes or until the dough begins to brown.
  5. Remove from the oven. Sprinkle the crust with 1 cup of the cheese and the spinach. Carefully pour the eggs over the cheese and spinach. Top with the remaining mozzarella cheese and the manchego cheese.
  6. Bake at 425 for 10 to 15 minutes or until the eggs have set and the cheese is golden brown.
  7. Remove from heat and place on a cutting board. Cool 5 minutes before slicing and serving.
