- 9 eggs
- 2 1⁄4 cups egg whites
- 1⁄2 large white onion, diced
- 20 slices bacon, precooked
- 3⁄4 lb colby cheese
- 1 1⁄2 cups mayonnaise
directions
- 1. Combine the eggs and egg whites. Fry in a pan to make scrambled eggs.
- 2. Place egg mixture in a large bowl and refrigerate until the mixture is chilled.
- 3. Dice precooked bacon and onion. Combine with the eggs. Grate colby cheese and add to the eggs. Stir in mayonnaise. Place in refrigerator.
- 4. When ready to serve, toast slices of bread. Spread egg mixture on toast, place under the broiler until eggs are bubbly and brown.
