Brenda's Sweet Snack Mix (microwave)

"Years ago, one of those clever preschool mom's, brought this as a snack. I couldn't stay out of the little package that my twins brought home. I think the key is adding butterscotch chips and mini m&m's. I like doing this in the microwave, as opposed to those recipes where you have to bake and stir, bake and stir!"

  • For the glaze

  • 12 cup margarine
  • 1 cup brown sugar
  • 14 cup white syrup
  • 18 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Cereal ingredients

  • 1 (15 ounce) box Crispix cereal
  • 2 cups peanuts
  • 1 (10 ounce) bag pretzels
  • 1 (16 ounce) bag miniature M&M baking bits
  • 1 cup butterscotch chips

directions

  • Mix margarine, brown sugar, white syrup and 1/8 teaspoons salt together in a microwavable bowl.
  • Microwave on high for 2 minutes.
  • Stir well.
  • Microwave on high for another 2 minutes.
  • Add 1 teaspoons vanilla and 1 teaspoons baking soda.
  • Stir until clear.
  • Pour crispix into brown paper bag.
  • Pour syrup mixture over all.
  • Stir well and shake brown bag.
  • Microwave 1 1/2 minutes.
  • Shake well again.
  • Microwave another 1 1/2 minutes Shake again.
  • Add peanuts and pretzels.
  • Shake again.
  • Spread onto large sheet of wax paper or large cookie sheet.
  • Cool well.
  • Add m&m's and butter scotch chips.
  • Mix together.
  • See the bowl empty before your eyes!

I am a special education teacher for the birth to three crowd! I love my job! My husband and I have 4 teenage daughters. He is so great--he keeps the 5 of us in balance..which isn't always the easiest job in the world! My picture came about while I was in college a few years ago. I was going crazy with tons of homework but felt compelled to make the family breakfast. I wasn't paying any attention to what I was doing and when I looked down, the eggs were smiling up at me! For some reason, I just love that picture and I don't really want to change it to a photo of myself. Biggest pet peeve: Tangled hangars! You try to get just one hangar and 3 more will somehow twist themselves around the one you want! I am very allergic to onions--I do not breathe them, eat them or touch them if I can help it. Sometimes I feel like we are an onion obcessed society! Start looking at labels! You would be surprised at how many boxes and packages contain onion in some form. That's okay....I make most things from scratch--which is probably better anyway.
