Brie and Green Onion Yeast Rolls

- 6 cups flour, plus more for kneading
- 1 tablespoon active dry yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 bunch green onions or 1 bunch scallion, thinly sliced, white and pale green parts only
- 2 cups warm water
- 10 1⁄2 ounces brie cheese, cut into 1/2 in chunks (or Camembert)
- 1 egg, beaten, for glaze
- sesame seeds, for decorating
directions
- Place the flour, yeast, sugar, salt, green onions, and water. Mix until a sticky dough forms.
- Knead the dough in a well-floured surface, until dough is elastic and smooth, about 5 minutes.
- Place dough in a greased bowl. Cover with plastic wrap and let rise in a warm place until doubled in size, about 11/2 hours Meanwhile grease a baking sheet.
- Knead the risen dough to get the air out and divide into 12-16 equal portions.
- Form balls of dough with your hands and place a piece of cheese in center. Enclose all of the cheese in the dough and seal the seam well. Place on baking sheet seam-side down. Repeat with remaining dough.
- Let dough balls rise until double in size, 30-45 minutes.
- Heat the oven to 359 degrees.
- Glaze the rolls with beaten egg and sprinkle evenly with sesame seeds.
- Bake 25-30 minutes. Remove from baking sheet and cool in a rack.
