ingredients

  • 1 medium head cauliflower, cut into florets and blanched
  • 1 medium broccoli, cut into florets and blanched
  • 1 medium vidalia onion, chopped
  • 1 cup grated old cheddar cheese (or try feta?)
  • 12 cup bacon bits (or veggie bacon bits)
  • 1 cup Miracle Whip (try using reduced fat)
  • 1 teaspoon Dijon mustard

directions

  • Toss veggies, cheese and bacon bits in bowl.
  • Mix dressing and mustard.
  • Pour over salad and toss to coat.
  • Refrigerate until ready to serve.
  • *To blanch veggies, plunge into boiling water briefly (2 minutes), then into cold water to stop the cooking process.).

  2. This is soooo delicious, D. Added more veggies ((green, red peppers, yellow squash, capers), since I had them from another recipe--(didn't blanch, tho); followed the recipe otherwise. Lots of crunchiness--love it! Great summer-time salad!
     
  3. Simple salad that's easy to whip up and very economical too! I used cheddar cheese shreds, some leftover bacon and Miracle Whip Light. I was glad that I blanched the veggies - I think that is a very good idea as it softens the broccoli and cauliflower just a tiny bit, thanks for including the instructions on how to do it. Made for Zaar Stars tag game.
     
  4. I used large head of broc and caul. Smart Balance in place of Miracle whip we are not a fan of it, adding Harvest coarse ground dijon to it. I also used real bacon using Recipe #107440 to cook it. Thanks for the good eats!
     
  5. This was great! I didn't think I would like it as much as an old recipe I had but it was even better! I did as one reviewer suggested and added some crumbled fried bacon (after one serving made exactly as directed). Both ways were absolutely great. Thanks for a great recipe!! Made for AU recipe swap 08.

Tweaks

  1. Everyone seems to have a similar version of this salad, and I love them all! This one is nice becasue the Dijon mustard gives it a little something extra. I used mayonnaise instead of MW, so I added a bit of sugar and vinegar to the mayo. A keeper recipe! Thanx!
