Broccoli and Cheese Rice Casserole

  • In a large skillet over medium heat, saute onion, celery and broccoli in butter for 3-5 minutes, Stir in cheese, soup, and milk until smooth.
  • Place rice in greased 8-inch square baking dish.
  • Pour cheese mixture over rice, do not stir.
  • Bake uncovered at 325°F for 25-30 minutes or until hot and bubbly.

  1. My family enjoyed this recipe so much I am asked to make it every week. This recipe was easy to make and turned out great the first time I made it. After making it a few times, I substituted Velveeta cheese with the cheese spread, adding a little extra because my family likes theirs cheesy, and used lowfat evaporated milk. This recipe is versitile because you could substitute many of the ingredients like using fresh broccoli or even cauliflower for the frozen broccoli. Its a big hit with my family.   4. This was yummy! My fresh broccoli turned out not to be to fresh, so I had use a bag of frozen cauliflower and it still turned out good. I also used Velveeta. Can't wait to actually try this with broccoli.

  1. This was very good. Like everyone else, I put my own spin on it: Velveeta instead of cheese spread, and roasted garlic mushroom soup instead of plain. My condensed milk looked very "off," so I just used regular milk. Even with all my changes, this one's a keeper!
     
  2. Very nice. Good flavor. I used cheese soup instead of cheese spread. I also added a bit of chopped chicken to the sauce mixture so this could be a main dish. This is a keeper, I was able to get my son to eat broccoli. Thanks!
