Ingredients Nutrition

  • 4 large eggs
  • 12 cup melted butter
  • 1 12 cups shredded cheddar cheese
  • 1 (8 ounce) package corn muffin mix
  • 1 (10 ounce) package frozen chopped broccoli, cooked and drained
  • 12 cup chopped scallion (optional)

Directions

  1. In a large bowl, beat eggs with an electric mixer until light colored.
  2. Add butter and cheese and mix on low.
  3. Add muffin mix, broccoli and scallions and mix at low speed for another minute.
  4. Coat a 12 cup muffin pan with cooking spray; divide batter among muffin cups.
  5. Bake at 375 degrees for 15 minutes until light golden brown.
  6. Cool on a rack before turning muffins out of pan.
