Broccoli-Cheese Bake

"This is a delicious side dish that doesn't include a heavy rice and doesn't use the normal "velvetta" type cheese sauce. It is very delicious."

  • 1 (16 ounce) package chopped broccoli
  • 14 cup butter or 1/4 cup margarine
  • 14 cup flour
  • 12 teaspoon cheese flavored popcorn salt
  • 2 cups milk (I use skim)
  • 6 -8 ounces cream cheese
  • 2 cups onions, chopped (either frozen or fresh heated in the microwave for about 3-4 minutes)
  • 34 cup grated cheddar cheese
  • 13 cup french fried onions

  • Cook broccoli according to package directions (I always to mine in the microwave) and drain.
  • Place broccoli in a 2-quart casserole dish.
  • Melt butter over low heat in saucepan.
  • Stir in flour and simmer 2-3 minutes.
  • Gradually add milk and continue to heat until sauce has thickened, stirring constantly.
  • Add cream cheese and blend until smooth.
  • Remove from heat and stir in onions.
  • Pour mixture over broccoli in casserole dish.
  • Sprinkler cheese and fried onions.
  • Bake at 350*F for 35-40 minutes.
