ingredients

  • 12 cup butter or 1/2 cup oleo, melted
  • 13 cup onion, chopped
  • 1 teaspoon salt
  • 34 cup cottage cheese
  • 1 (10 ounce) package frozen chopped broccoli
  • 4 eggs, slightly beaten
  • 1 (8 1/2 ounce) package Jiffy corn muffin mix

directions

  • Thaw and drain broccoli.
  • Combine first six ingredients.
  • Stir (don't beat) muffin mix Into first mixture.
  • Pour into a greased 13" x 9" x 2" baking pan.
  • Bake at 400 deg F for 20-25 minutes , or until done.
  • Cut Into serving size squares.

  2. I've made this a couple of times and it is sooo good. It does make a lot but that's not a problem 'cause it always gets eaten.

  4. this was so delicous! i made it tonight for a cook out and every one loved it. one of our guests went to the grocery store and bought the ingredients so i could make another batch. really easy and delicous. i used low fat cottage cheese, small curd and dehydrated minced onions. a keeper.
     
  5. I have been making this same recipe for years. I like to serve it along with potato soup or corn chowder for an easy meal. You'll need a fork to eat it- it's not like regular corn bread, but more of a casserole.
