  1. Preheat oven to 375 degrees.
  2. Generously grease a 9" deep dish pie plate.
  3. Combine the rice, 1/2 the cheese, and 1 egg and press into bottom of pie plate.
  4. Beat remaining eggs; add salt and pepper to taste, (cooled slightly) broccoli, mushrooms, and milk. Pour over rice mixture in pie dish.
  5. Bake at 375 degrees for 20-25 minutes, until set and starting to brown.
  6. Remove pie from oven, sprinkle remaining cheese over all. Return to oven and bake 10 minutes longer. (Until cheese melted, and center of pie is firmly set.).
  7. Serve with Salsa and sour cream or hollandaise sauce on the side.
