Broccoli Salad

"My boyfriend is in the army and this year for the x-mas party we were to bring a cold side dish. I knew there would be all the typical side dishes and I wanted something different. I came up with this after thinking about my four favorite salad ingredients and how I always end up eating them first. This recipe can be doubled or even cut in half depending on what you would need it for. I recommend making it the morning or night before serving. Enjoy!!"

  • 4 cups broccoli florets
  • 1 cup carrot, shredded
  • 12 cup cheddar cheese, finely shredded
  • 1 12 cups chow mein noodles
  • 1 cup mayonnaise, Hellman's works best
  • 2 -3 tablespoons hidden valley ranch dressing mix, about half the packet

directions

  • in a small bowl, mix mayo and ranch seasoning together and reserve.
  • in a large bowl, combine broccoli, carrots, and cheese.
  • add couple spoonfuls of the dressing at a time to the veggies until well coated. you may have leftover dressing that can be used for snacking.
  • refrigerate until ready to serve.
  • right before serving, gently mix in the chow mien noodles.
