  1. Simmer broccoli, covered, in water for 3 to 4 minutes, or until broccoli is crisp-tender.
  2. Remove from heat and drain.
  3. While broccoli is cooking, stir together mustard, olive oil and vinegar.
  4. Stir in mustard sauce.
  5. Season to taste with salt and pepper.
