Broccoli With Nuts and Cherries

"The original of this recipe came from the Dec/Jan 2010 Taste of Home Healthy Cooking, but since I do love the nuts & cherries, it has been tweaked."

  • Place broccoli in a steamer basket, then put that into a large saucepan containing an inch of water. Bring to a boil, then cover & steam 3 to 4 minutes or until tender.
  • Meanwhile, in a large nonstick skillet coated with cooking spray, saute walnuts & garlic in the oil until garlic is tender.
  • Stir in the cherries, salt, pepper flakes & broccoli, tossing to coat.

  4. Enjoyable side! Got home late and was looking for something to do with my broccoli that would be quick and easy; this not only fit the bill but was a tasty new twist on broccoli. I made as written and we really enjoyed the way the sweet, hot nutty oil coated and flavored the broccoli. This is a must have recipe that will be made again. Thanks for the post.
     
  5. Started making this and did not have enough walnuts, so I added a little chopped pecans to the walnuts. A wonderful side dish to dinner tonight, and liked the addition of cherries to this. Made for PRMR tag.
