- 24 ounces frozen chopped broccoli
- 1⁄2 lb butter
- 1 onion, chopped
- 1 1⁄2 cups flour
- 2 cups water, reserved from cooked broccoli
- 1 lb cheddar cheese, grated
- 1 lb Velveeta cheese
- 1 tablespoon Worcestershire sauce
- salt and pepper
directions
- Cook broccoli in water until tender. Drain and reserve the liquid.
- Melt butter in a large soup pot. Add flour, stirring constantly to make a roux. Add onions and saute until tender. Add liquids, stirring constantly to prevent lumping. Add cheeses, broccoli, worcestershire, salt and pepper. Contiue cooking until cheeses are melted.
- Add more water or milk if the soup is too thick.
