  • Cook broccoli in water until tender. Drain and reserve the liquid.
  • Melt butter in a large soup pot. Add flour, stirring constantly to make a roux. Add onions and saute until tender. Add liquids, stirring constantly to prevent lumping. Add cheeses, broccoli, worcestershire, salt and pepper. Contiue cooking until cheeses are melted.
  • Add more water or milk if the soup is too thick.
