Ingredients Nutrition

  • 2 cups broccoli, cut in chunks, use the stems, not just the tough parts
  • 14 cup sour cream. i use low fat
  • 2 tablespoons onions, finely minced (optional)
  • 1 tablespoon mayonnaise, I use Duke's low fat
  • 2 teaspoons lemon juice
  • 14 teaspoon curry powder

Directions

  1. In a medium saucepan bring about 1 inch of salted water to a boil over medium-high heat.
  2. Add broccoli and cover and cook for 10-12 minutes until tender.
  3. Drain broccoli well.
  4. Put sour cream. onion(if using), mayonnaise, lemon juice, and curry powder in food processor bowl.
  5. Add broccoli and push it down into sour cream mixture.
  6. Pulse until mixture is pureed.
  7. Taste and add more salt and lemon juice as needed.
