Broiled Basil Eggplant

"Eggplant that isn't breaded and fried! The cooking time for this recipe is for a large eggplant....if you use the smaller japanese style eggplant, reduce the broiling time."

  1. Made this recipe last night as a side to Recipe #455716. We frequently have broiled eggplant with olive oil, salt and pepper, but this recipe was a real treat. I absolutely LOVED the fresh herb olive oil that was brushed on at the end. It was very flavorful. Thanks for this keeper. I will be making my eggplant again this way, particularly in summer months when herbs are fresh from the garden. Thanks! Made for ZWT 7

  2. What a wonderful way to prepare eggplant with a nice presentation. Made as written cutting down by using a slightly smaller eggplant as there was just two of us. Also used grated mozzarella instead of sliced due to that is what I had on hand. DH loved the drizzle of herded oil over the top. I liked that there was lots of flavor with no frying or breading. Will make again. Thanks so much for the post.

  3. I may have cut back a little on the cheese because the star of this was the lemon and herbs! Like candy!

  4. An easy dish. I made it a bit softer than called for. Also I would reduce the quantity of oil. Like the ease of making it.

  5. This recipe is so easy to do. I like that this is broiled instead than pan-fried. The dressing is really good with the fresh herbs. Thanks breezermom :) Made for the Count Dracula and His Hot Bites for ZWT7
