Broiled Sweet and Spicy Salmon With Spinach Rice

- 1 cup long grain white rice
- 2 cups Baby Spinach, chopped
- salt
- pepper
- 1⁄4 cup red pepper jelly
- 1 tablespoon low sodium soy sauce
- 2 teaspoons freshly grated ginger
- skinless salmon fillet, cut into 4 pieces
directions
- Cook the rice according to package directions. Fluff with a fork; fold in the chopped spinach and 1/4 tsp salt and pepper.
- Heat broiler. In a small bowl, whisk together the jelly, soy sauce, and ginger.
- Place the salmon on a foil-lined baking sheet. Season with 1/4 tsp pepper, and broil for 5 minutes. Spoon the jelly mixture over the salmon and broil until opaque throughout, 2 to 4 minutes more.
- Serve with rice.
