Broiled Tomatoes With Olives and Garlic

ingredients
- 2 medium tomatoes, vine-ripened
- 3 kalamata olives, pitted and minced (or other large brined olives of your choice)
- 1 garlic clove, minced
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
directions
- Preheat broiler and set oven rack about 4 inches from heat source.
- Combine olives, garlic and olive oil.
- Slice tomatoes about a half inch thick and arrange on a lightly oiled baking sheet, in one layer.
- Brush tomatoes with the olive and garlic mixture.
- Broil, watching carefully, until just bubbling or to your liking.

ohhh yum! So delicious! We loved these, what a great way to serve fresh tomatoes. I had to use sliced black olives because that was what i had in, they worked beautifully! Served them as a side with salad and a steak and kidney pie. I will be making these again and often during tomato season, thanks for posting!

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown.
I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy.
I have 2 teenage sons and cooking to suit everyone's taste is always a challenge. Recipezaar has certainly made life easier in that regard, with so many great recipes to choose from.
