Broke Guy's Chili-Garlic Noodle Bowl

"I always have some sort of noodles in my pantry. They are cheap as well as filling. When I get a hankering for Asian food and the wallet is somewhat empty, I use this quick and easy recipe. If I have some cash, i'll add the shrimp but it's good without as well. It also holds up well as leftovers."

  • 8 ounces soba noodles or 8 ounces spaghetti
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 14 cup vegetable oil, divided
  • 1 tablespoon chili-garlic sauce
  • 1 lb medium shrimp, peeled deveined (optional)
  • 2 cups cabbage, shredded (optional)
  • 2 cups frozen peas, thawed (optional)
  • 4 carrots, thinly sliced

  • Cook the noodles according to the package directions.
  • Toss them with the lime juice, soy sauce, sesame oil, chili-garlic sauce and 2 tablespoons of the vegetable oil.
  • If you are using the optional shrimp, heat the remaining 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook, tossing frequently, until opaque throughout (2 to 3 minutes).
  • Divide the noodles among 4 bowls and top with the shrimp. Add the cabbage, peas and carrots, dividing evenly.
