“Anyone can make rice. It's not hard and there are all kinds of recipes on the Net. My go-to rice is brown rice since I think it makes me feel like I've eaten more than I really have. This recipe can easily be modified with whatever veggies you have on hand.”

  1. Cook the rice according to the package directions.
  2. While the rice is cooking, heat the oil in a large skillet over medium-high heat. Add the mushrooms and cook until brown (4 to 6 minutes). Add the garlic and cook until fragrant (30 seconds).
  3. Add the cabbage and saute until wilted (2 to 3 minutes). Add the oyster sauce and rice vinegar. Stir-fry tossing frequently until liquid is gone (2 to 3 minutes). Add the spinach and a pinch of salt. Cook until partly wilted (1 to 2 minutes).
  4. Serve the mushrooms and spinach over the rice.
