“Similar to New England Brown Bread but muffin size.These are nothing like the overly sweet, cake like muffins from a bakery. Delicious served alongside a Boston baked bean dinner, barbeque meats or with a salad at lunch. You may substitute whole wheat flour for one of the listed flours.( If you like Irish soda bread with raisins and caraway feel free to add about 3/4 tsp. of caraway seed to this recipe.)”

  1. Heat oven to 400 and grease standard size muffin tin.
  2. Mix flours, cornmeal, salt and baking soda.
  3. In seperate bowl: mix egg, vegetable oil, molasses, sugar and buttermilk.
  4. Add buttermilk mixture to dry ingredients stirring until blended.
  5. Stir in raisins.
  6. Fill muffin tins 3/4 full. Bake 15 minutes or until tester tests clean.
