  1. Preheat oven to 375°F
  2. Cream Butter.
  3. Mix in sugar.
  4. Beat the egg.
  5. Add the egg to the mixture. Combine thoroughly.
  6. Add the vanilla and grated lemon rind.
  7. Drop in the pinch of salt.
  8. Sift flour.
  9. Add the flour and mix thoroughly until creamy.
  10. Grease a cookie sheet even if it is nonstick.
  11. Bake until the edges brown nicely. Maximum time is 10 minutes. Check the cookies at eight minutes and take them out when they're brown on the edges to your liking.
