  • In a saucepan over medium-high heat, bring the water to a boil.
  • Add in rice and salt; lower heat to medium-low and cook, covered, about 40 minutes or until tender.
  • Stir in raisins and walnuts; cook, uncovered 5 more minutes.
  • Serve in bowls with milk and brown sugar if desired.

  2. I often make a big batch of brown rice for quick eating during the week. This worked great for a fast, tasty and healthy breakfast. I put the pre-cooked rice, raisins and nuts in a bowl with some soy milk and just popped it in the microwave. Hadn't thought of doing so until I found this recipe. Thanks for sharing!
