- 4 boneless chicken breasts
- 1 (10 ounce) can cream of chicken soup
- 1 (10 ounce) can cream of celery soup
- 1 (10 ounce) can cream of mushroom soup
- 1⁄4 cup skim milk
- 1 1⁄2 cups brown rice, uncooked
- 1⁄2 teaspoon pepper, to taste
- 1⁄2 teaspoon paprika, to taste
directions
- Preheat oven to 350 degrees.
- Spray casserole dish with baking spray.
- Mix soups, rice and milk; pour into casserole dish.
- Lay chicken pieces on top.
- Dot chicken with butter spray; sprinkle with pepper and paprika.
- Bake 1 1/2 hours.

This may be my fault for only having 2 cans of soup but the chicken was too dry. I had to add water because some of the rice wasn't done on top so I mixed the almost crunchy and brown rice in with the moist rice underneath, flipped the chicken over but I think I probably should have pulled the chicken off the top at that point. Was too much rice for that little amount of chicken so I added leftover rice to a vegetable soup I already had fixed.
