  • Brown chopped onion and sliced mushrooms in a large saucepan with the olive oil, about 5 minutes.
  • Add brown rice and stir to coat in oil.
  • Add chicken broth.
  • Bring to a boil, then simmer for about 45 minutes or until all liquid is absorbed.

  1. Made this recipe countless times, just now commenting. I try to keep a zero-waste kitchen-- this recipe is perfect for use-or-lose mushrooms and onions because brown rice and stock (i use veggie and/or mushroom) store for a long time. I mince and add a clove of garlic at the beginning with mushroom/onion step.
     
  2. Wonderful earthy flavor. I use short-grained brown rice (which raises this dish to another level) and vegetable broth.
     
  3. Not being a fan of brown rice, I fully expected to hate this. Normally when one wanders into any situation with that kind of attitude the outcome isn't good. This recipe is FANTASTIC---I loved it!!!! I followed the recipe adding in garlic. This recipe is so flexible; you could add just about anything and it would be great. Next time, I will add some veggies and maybe chicken and make it a meal.<br/>Yum, SO GOOD!
     
  4. Thank you for posting this, exactly what I was looking for. The only adjustment I made was that I used oil and butter, because I like the taste of butter nad rice.
     
  5. This dish is outstanding. The only adjustment that I made was to add a bit of chopped green onion at the end of cooking. Wow! My 10 yr old son polished off all the leftovers within 24 hours. I'd call this one a DEFINITE keeper. Thanks MPS Michigan for an easy and delicious dish!
