ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 cups cooked brown rice
- 2 cups milk
- 2 eggs
directions
- Put rice, egg and milk in a food processor, blend until smooth. (Or don't, but the texture is bumpy).
- Mix with flour, baking powder and salt.
- Fry like pancakes.

We really liked these! I'm trying to put more whole grains into our diet, so this was a great way to use leftover brown rice. I did put it in the food processor as directed. As I was lifting them off the griddle, they seemed a bit heavy, and I was afraid they would be tough; they are heavier, but that is natural, since they are made from whole grain, and they weren't tough at all. I ate mine topped with a sliced fresh peach and a dab of Reddy Whip! YUM! Definetely a keeper!
