“This is a nice healthy quick bread, based on a recipe from Epicurious. I made some changes to suit my taste. I like to bake it in a long, narrow Pullman loaf (10 ¾” X 3 ½ “), to make it easier to slice. Excellent sliced thinly and toasted, with peanut butter or butter and marmalade. Makes 1 loaf”

  1. Preheat oven to 425°F Grease and flour a Pullman or standard loaf pan.
  2. Combine dry ingredients in a large bowl.
  3. Melt butter in large measuring cup. Add vegetable oil, molasses, and buttermilk to cup.
  4. Pour liquids into dry ingredients, stir quickly to combine. Do not over mix. Transfer dough to prepared loaf pan, spread into corners and smooth top.
  5. Bake until bread is dark brown and tester inserted into center comes out clean, about 40 minutes. Turn bread out onto rack to cool. Cool at least 1 hour before slicing.
