Brown Sugar Bran Muffins

  • In large bowl, soak raisin bran cereal in milk for 10 minutes.
  • Add egg, oil, and vanilla. Mix well.
  • Add flour, wheat germ, flax seed, sugars, baking powder, and salt.
  • Mix just until moistened. Batter will be a little lumpy.
  • Spoon mix into 12 greased muffin tins, filling each only 1/3 full.
  • Sprinkle filling onto each muffin tin.
  • Spoon rest of mix into muffin tins, filling until tins are 2/3 full.
  • Sprinkle topping over muffins.
  • Bake at 400°F for 20 minutes, or until done.
  • Enjoy! These freeze well.

  1. Delicious muffins. I used all brown sugar which worked out well. I discovered I was out of cinnamon so I took a chance and used allspice. I also added some raisins because I used a plain bran cereal. Thanks for these healthy yummy muffins!
     
  2. Very good! I love a healthy muffin for breakfast and these were quite tasty. Used organic raisin bran which has sturdy flakes so next time would crush slightly before soaking. Used sugar rather than Splenda, otherwise no changes. I worried the cinnamon would be too much but it was just right, and a healthy addition as cinnamon helps control blood sugar. Would suggest watching the baking time. At 15 minutes mine were done, I'd check next time at 12-13. These will be good for the kids, too. Usually I say "bran muffin" and they run screaming. I'll think we'll call these "cinnamon sugar" muffins, instead:)Thanks for sharing your recipe! Made for PAC Fall 2007.
