- 1⁄2 cup shortening
- 1 egg
- 1 cup milk
- 2 teaspoons vanilla
- 1 cup flour
- 1 cup wheat flour
- 1 cup brown sugar
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
directions
- In a mixing bown, cream the shortening and brown sugar together.
- Mix in the egg, milk and vanilla.
- Once thoroughly mixed, add the dry ingredients just until they combine.
- Place batter in paper cupcake cups or into a well greased pan about 3/4 up.
- Bake at 400 for 16-20 until you get a clean toothpick from the center of the muffin.
- Let cool 3-5 before moving from the pan to a wire cooling rack.
- Enjoy.
