  • In a mixing bown, cream the shortening and brown sugar together.
  • Mix in the egg, milk and vanilla.
  • Once thoroughly mixed, add the dry ingredients just until they combine.
  • Place batter in paper cupcake cups or into a well greased pan about 3/4 up.
  • Bake at 400 for 16-20 until you get a clean toothpick from the center of the muffin.
  • Let cool 3-5 before moving from the pan to a wire cooling rack.
  • Enjoy.
