MERINGUE CRUST
- 3 egg whites, room temperature
- 1⁄8 teaspoon salt
- 1⁄4 teaspoon cream of tartar
- 3⁄4 cup granulated sugar
- 3⁄4 cup chocolate wafer crumbs
- 1⁄2 cup chopped pecans or 1/2 cup walnuts
- 1⁄2 teaspoon vanilla

FILLING
- 1 cup whipping cream
- 2 tablespoons cocoa
- 1 tablespoon granulated sugar
- 1⁄2 teaspoon vanilla
- 2 tablespoons grated chocolate
directions
- For the meringue crust, beat egg whites, salt and cream of tartar until a it forms a stiff froth. Add the sugar gradually, until the mixture is very stiff and the sugar is dissolved.
- Fold in wafer crumbs, pecans and vanilla. Spread in a greased 9 inch pie plate pressing the mixture up the sides slightly to form a shell. Bake in 325F oven about 35 minutes until dry. Cool.
- To make the filling you beat the whipping cream, cocoa, sugar and vanilla in a small bowl until stiff. Spread over pie.
- For a garnish sprinkle with grated chocolate.
