Directions

  1. Saute onions in olive oil for a minute, then add peppers.
  2. Whisk eggs, milk, salt, and pepper until foamy.
  3. Add chililes and olives along with chili powder and cumin.
  4. Add egg mixture to skillet and cook until beginning to set, then add rice and cheese.
  5. Stir to break up rice.
  6. Continue to cook and stir until no longer runny.
  7. When fully cooked, serve in tortillas.
