directions

  • mix sausage, green onion celery or green pepper.
  • mix eggs milk flour and garlic powder.
  • place 1/2 cup meat mixture in middle of tortilla.
  • roll and place in 9 x 13 inch pan seam side down.
  • pour egg mixture over rolls.
  • cover and refrigerate overnight.
  • bake coverd 45 to 50 minutes or until set.
  • sprinkle with cheese bake 5 more minutes.
  • let stand 10 minutes before serving.
  • garnish with green onion and chopped tomatoes.
  • serve with enchilada sauce if desired.

  1. If I make it again, I'll use a whole green pepper and some celery, cooked with the sausage. I used Chorizo. Served with refried beans and Yucatan-Style Chicken Lime soup.
