Bruschetta

"This is a much lighter version of my favorite appetizer! It has a very fresh taste to it, and a little more bite than average bruschetta."

  • Dice the tomato, red onion, and garlic clove and mix together in large bowl.
  • Shred Fontanella cheese and place in bowl. Stir.
  • Add in red wine vinegar and pepper to taste.
  • Slice French loaf into 1/4" to 1/2" thick disks. Toast the disks in oven (if making a lot), toaster oven (if it's a smaller batch), or even in the toaster, if it's just a snack for you!
  • Spoon mixture onto disks. You can also put the disks back into the oven/toaster over (but not the toaster!) if you prefer it warm.
  • I have found that this mix is much better after sitting for a few hours in the fridge.
