Bruschetta

- 1 loaf French bread
- 1 tomatoes
- 1⁄4 red onion
- 1 garlic clove
- 1⁄8 - 1⁄4 cup hard Italian cheese (Fontanella,the kind in the black wax, works best)
- 3 -5 tablespoons red wine vinegar
- black pepper (to taste)
directions
- Dice the tomato, red onion, and garlic clove and mix together in large bowl.
- Shred Fontanella cheese and place in bowl. Stir.
- Add in red wine vinegar and pepper to taste.
- Slice French loaf into 1/4" to 1/2" thick disks. Toast the disks in oven (if making a lot), toaster oven (if it's a smaller batch), or even in the toaster, if it's just a snack for you!
- Spoon mixture onto disks. You can also put the disks back into the oven/toaster over (but not the toaster!) if you prefer it warm.
- I have found that this mix is much better after sitting for a few hours in the fridge.
