  • Dice tomatoes, fresh basil, and garlic cloves and marinade in balsamic vinaigrette and extra virgin olive oil for 2 hours.
  • Preheat oven at 450 degrees.
  • Cut ciabatta rolls in half.
  • Lightly coat one side of each bread slice with olive oil using basting brush.
  • Bake bread oil side down on top oven shelf for 5-6 minutes.
  • Serve bread oil side up and top with chilled bruschetta.
  • Top bruschetta with mozzarella if desired.
