Buffalo Chicken Sandwiches

- 1 tablespoon butter or 1 tablespoon margarine, melted
- 1 tablespoon hot pepper sauce, to taste
- 4 frozen breaded chicken patties (sandwich size)
- 4 pieces leaf lettuce
- 4 hamburger buns
- 4 tablespoons bleu cheese salad dressing
directions
- Preheat oven to 400°F.
- Combine butter and hot sauce in a small cup, mix well.
- Brush butter mixture over chicken patties.
- Place chicken patties on ungreased cookie sheet.
- Bake for 12 to 15 minutes or until thoroughly heated.
- Meanwhile, heat buns if desired.
- Place lettuce on bottom halves of buns.
- Top each with a chicken patty and a tablespoon of blue cheese dressing.
- Cover with top halves of buns and serve.

These were great!! I did a couple different things to try and make them healthier...I used the I Can't Believe It's Not Butter spray mixed with the hot sauce and also used Boca brand vegetarian "chicken" patties, and used just a wee bit of the blue cheese dressing. But they were still great and really dressed up plain ol' frozen patties! The only change we will make is to use more next time....it was that yummy!! Thanks for posting!!

These sandwiches are so easy and quick to put together, but they're also quite flavorful. I had purchased some frozen chicken patties, thinking they would be handy for last-minute meals, but I really didn't care for them. I was glad when I saw this recipe mentioned in a thread, because I knew that this would be a good way to use the rest of them. I used Recipe #92094 and Recipe #19542. We do like our heat, and that sauce recipe has twice as much hot pepper sauce (Frank's RedHot) as butter and an extra flavor boost from the addition of cayenne. I generously brushed it on the patties before baking and brushed on extra while assembling the sandwiches (except our son's). :) I served with Recipe #41430. This is a great way to dress up and add flavor to otherwise bland and boring breaded chicken patties. Thanks for posting the recipe!

“So many recipes, so little time.” I love to cook, especially trying new recipes. I try to prepare at least 3 new recipes a week. I have enjoyed cooking and baking since I was first able to peer over the top of Mom’s kitchen counter.
I have been married for over 25 years and have one adult daughter. My hobbies (other than cooking) include gardening, yoga, shopping, reading, and crafts. I also have a commitment to myself to work out for an hour at least 3 times a week
Every other weekend, DH and I go to our weekend home at a golf course country club. On Friday afternoons, we usually eat lunch on the road as we try to beat the traffic out of town. I'm always looking for new sandwich ideas for those Friday lunches. Once we get there, I don't want to drive yet again to the supermarket or even out to dinner. (The closest supermarket is 3 miles away.) Through 'zaar, I have found the convenience of "dump" recipes for Friday night dinners. I make them up in advance and freeze, then just put them in the ice chest for the trip. They are ready to grill or bake for dinner.
During the week, I stick with quick and easy recipes that can be prepared in 45 minutes or less. On weekends is when I try the more complicated recipes that take a longer time to prepare. I've assembled by main dish cookbooks accordingly.
I have nothing against convenience foods (use them all the time!) and I am in no way a food snob. However, I don't cook with cream of xxxx soups, processed cheese food, and others of that ilk. Besides being full of sodium, fat and other bad things, I just don't care for the taste and texture.
DH is lactose-intolerant and has high cholesterol, which challenges me to find healthy good-tasting recipes.
