  • Beat shortening and butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Add vanilla, mixing well.
  • Combine flour, baking powder, and baking soda; gradually add oats and remaining ingredients.
  • Stirring well after each addition.
  • Drop dough by tablespoonfuls 2 inches apart, onto ungreased baking sheets.
  • Bake at 350° for 10 minutes or until lightly browned.
  • Remove cookies to wire racks to cool.
  • Cookies may be frozen in airtight containers up to 3 months.

  1. This is a family favorite! My co-workers always request I bring these in around the Holiday time, as well. I prefer to use walnuts, instead of pecans. I use a 1/4 measuring cup to scoop the batter, and bake 6 to a cookie sheet. Bake at 325 degrees about 15 minutes. Makes big, chewy cookies. :)

Tweaks

  1. The only changes I made were 4 heaping cups of flour, 3/4 tsp of pink salt, Pecans instead of walnuts and no coconut. Yummy
