Buffalo Meatballs

This recipe is from the Carmen Creek recipe card I picked up at the Wholefoods Market. I have not made these but have had buffalo at Wholefoods and it was very good and savory. Would be a nice appetizer to have at a party to offer guests something new to try. It does not give the recipe for a glaze or sauce but you could probably look at Carmen Creek website for ideas, or just serve on their own."

directions

  • combine all ingredients.
  • shape into 1 inch balls.
  • place in single layer on a cookie sheet
  • bake at 350' for 10-15 min or till cooked through.
  • Drain and let stand.

  1. Since I could not find buffalo anywhere. I combined 1 1/2 lbs 80/20 ground beef and 12 oz hot Gwaltney bulk sausage. I also added 1/2 tea of Ted's Montana Grill seasoning but the rest remained the same. This turned out to be a great meatball w/ lots of flavor. I know this is not a Buffalo meatball and maybe I should not have reviewed but it was soooo good, I just had to report my findings. ( Ted's can be found on the internet) and I use it on all things meat. It is the bomb!!!!!!!!!!!
