Ingredients Nutrition

  • Cookie burgers dough
  • 1 (22 1/3 ounce) package sugar cookie mix
  • 2 eggs
  • 13 cup vegetable oil
  • 1 teaspoon water
  • 1 (10 ounce) package peanut butter chips or 1 (10 ounce) package butterscotch chips
  • Topping
  • 34 cup flaked coconut
  • 5 -6 drops green food coloring
  • Filling
  • 12 cup butter or 12 cup margarine, softened
  • 2 23 cups powdered sugar
  • 12 cup baking cocoa
  • 14 cup milk
  • 1 teaspoon vanilla extract

Directions

  1. Combine cookie mix, eggs, oil, and water; mix well.
  2. Stir in peanut butter or butterscotch chips.
  3. Shape into 1-1/4 inch balls; place 2 inches apart on an ungreased baking sheet.
  4. Bake at 375 degrees Fahrenheit for 9 to 11 minutes or until lightly browned.
  5. Remove to wire racks to cool.
  6. For topping, mix together coconut and food coloring in a plastic "ziplock"-type baggie; knead through baggie until until all coconut is green.
  7. For filling, mix together all filling ingredients in a mixing bowl; beat until smooth.
  8. Frost the bottoms of 1/2 of the cookies; sprinkle with colored coconut.
  9. Top with remaining cookies and gently squeeze together.
