  1. Preheat oven to 375. you can use a regular pan. Get everything ot of the chicken. The giblets, neck, liver etc. Wash off chicken with water. Mix together butter seasoning salt, garlic, pepper, paprika, and basil with a mixer till blended. Lift the skin gently but don't break it. lossen most of it that you can.
  2. put 1/2 the butter mix under the skin and rub inches and use the rest on the outside. put in pan and add broth. put onions and bay leaves in broth. Cover and cook 1 h 1/2 baste occasionally. uncover cook another 30-45 min until temp inside the thigh is 160.
