- To make butter curls, start with a stick of butter that has been at room temperature a few minutes but is still firm. The butter needs to be soft enough to peel without falling apart but cold enough to hold its shape. Heat spoon or butter curler in the very hot water, then pull firmly over the stick of butter to form curls. If the curls break the butter is too cold. Reheat the butter curler as needed.

I always make butter curls for my Bed and Breakfast guests - they look so pretty sitting in an old china dish on the breakfast or dinner table......and I have NEVER used a butter curler, always a spoon! So, I HAD to review Rita's recipe - and she has written it SPOT ON......this exactly how you make butter curls! Well written with good tips and it's so nice to see a simple technique like this posted on Zaar! Thanks Rita.......I used local unsalted Poitou Charente butter, and served these for B and B guests for their breakfast! Made for Photo Tag. FT:-)
